standuponit , or
inaurolillium , who cook at industrial levels....
What kind of person gives anyone a bar of chocolate weighing 5 kilos? The thing is 11 plus pounds, it is the size of an ENORMOUS hunk of lumber, larger than my best cutting board. It takes a cleaver with a mallet to reduce it to usable sized pieces. A one pound chunk flew off the counter and nearly smashed my toe.
I've made three batches of truffles so far, using a .5 kg piece and two cups of cream for each batch. One orange, one raspberry, and one completely fabulous chocolate caramel. The Stop and Shop ran out of cream without diglycerides so I had to stop, but I still have some cinnamon/cayenne ones planned, and possibly rum. Maybe rum raisin.
